Brown Rice Noodles

This is an excellent summer meal and a good pick if you are entertaining guests. It is very easy to make and appealing to even the most feisty of palates.

BROWN RICE NOODLES


Olive Oil
Fresh Basil
Zuchinni (sliced)
Carrots (sliced)
Celery (sliced)
A sprinkle of ground chili pepper


Stirfry vegetables with olive oil and oregano. Add fresh basil when vegetables are almost finished cooking (if you are using dried basil then add with oregano). Cook noodles separately. When noodles have reached desired tenderness strain and add olive oil.

Combine noodles and vegetables and then lightly sprinkle a bit of chili pepper.

For dessert we had some of Myra’s homemade yogurt, blueberries warmed on the stove and sugarless apricot sauce (but apple sauce will do in a pinch).
