garden burger and summer soup
This dinner was a nice refreshing and energizing meal after a long day in the sun. Myra's summer soup debut, served at room temperature was complimented nicely by the garden burger, some fresh organic avocado's brought over by our neighbor, cottage cheese, cucumbers, and Myra's famous muffins. (I will be making those muffins tomorrow and will post the recipe and results then!)
SUMMER SOUP
Chayote Squash
Yogurt
Cumin
Cucumber
Cilantro
Blend chayote squash, yogurt and cumin. Serve at room temp or chilled. Garnish with cucumber and cilantro.
GARDEN BURGER
Whole mung beans (alternatively garbanzo, adzuki, black beans, or split mung)
Carrots
Celery
Asafoetida
Wheat flour
olive oil or ghee
Dill
Bragg
Pinch of black pepper
Pinch of cayenne
